Megan has already successfully completed egg desensitization with Dr. Wasserman. In addition to dosing with peanut twice a day, in order to maintain her desensitization to egg, Megan has to dose with 1 Tbsp of egg white powder every evening. You may wonder why egg powder and not just egg, well the answer boils down to protein issues. As egg is cooked or baked the protein is denatured and so it would vary too much on a day by day basis to just use eggs in baking or eating eggs scrambled, fried, ect..
